At Fermín, our products are carefully crafted using traditional methods passed down through generations. Our artisanal process is slow and laborious.

When it comes to Iberico ham, we are very proud of our 4 different categories. One of them is the 100% Iberico Free-Range (Cebo de Campo) that we identify using a dark green label.

We are talking about a pure Iberico breed, that it’s genetic has been carefully selected, has had an active life and has been raised in freedom. They benefit from free-range diet based on cereals, legumes, herbs, roots, and everything nature provides. These pigs do not eat acorns like the 100% Iberico acorn-fed (black label category). Our 100% Iberico grain-fed free range products are truly one-of-a-kind in their flavor, offering a less nutty and more subtle and harmonious flavor profile than our signature 100% acorn-fed products.

From the salting, to the final product, every step is carefully controlled to ensure that our products are of the highest quality. The curing process is carried out slowly and deliberately in natural drying rooms with windows to the exterior, which regulate the temperature and humidity based on our weather. This attention to detail is one of the reasons why our customers keep coming back for more.

Our 100% Iberico grain-fed free range products come from pure bred pigs prized for their rich and flavor with a superb marbled and delicate texture that melts in your mouth.

Whether you’re looking for bone-in or boneless ham/shoulder, or loin, we have you covered. Each cut offers its own unique flavor and personality. The bone-in is perfect for slicing small and delicate pieces by hand and serving as part of a charcuterie platter, to garnish a very special recipe, or serving by itself. The boneless is a great option to cut in a slicer. Slice and serve more in less time.  And for those looking for something a bit more refined, the loin is an excellent choice, offering a delicate and sophisticated flavor that is also perfect for a special occasion. Serve as an aperitif, at a wine tasting, as an appetizer, or as part of a recipe for an elegant meal.

But no matter which cut you choose, our 100% Iberico grain-fed free range products are sure to impress. And when it comes to wine pairing, we recommend a Rioja Reserva or an aged Tempranillo to complement the rich and savory flavors of the ham.

We recommend serving our products below room temperature (60F) to allow the flavors to fully develop and come to life. Serving at proper temperatures makes for a truly memorable culinary experience.
