IBERICO ASIAN BOWL

Servings: 2 | Prep/Cooking Time: 20 minutes

INGREDIENTS:

1 cup of japanese-style sushi rice or Jasmine rice, cooked
3-4 slices of Fermin Iberico ham or shoulder
1/4 cup edamame
1/2 cup thinly shredded carrots
1/4 medium avocado, peeled, pitted and diced
1/4 cup matchstick-cut cucumber, seeded, sliced thinly
1 nori sheet (toasted seaweed), halved, sliced finely (optional)
1 tablespoon toasted sesame seeds
1 teaspoon finely chopped fresh ginger root

INGREDIENTS FOR THE DRESSING:

1 tsp red chilli flakes
1 tbsp peanut oil
1 tbsp honey
1 tbsp rice wine vinegar

PROCEDURE:

Add all the ingredients to the bowl without mixing them all.
To make the dressing; combine all the ingredients in small jug and pour on top to taste.

NOTES:

Full of color, refreshing and healthy! You can replace the rice with quinoa, barley or couscous. You can add any type of veggies, such as shredded cabbage, bean sprouts, fresh corn or asparagus. Substitute our Iberico Ham for Shoulder, Loin or Coppa. This bowl will be also great with a honey sirascha aioli or orange soy sauce.
